Crawfish Season

Last weekend we had our first crawfish boil of the year. Chuck did the cooking for a group of about 40 people from our church. He did a great job! The tables were loaded down with crawfish, corn, potatoes, mushrooms, garlic, and lemons, and it was delicious! I have been particularly homesick for Louisiana lately, so it was nice to have a little taste of home. We had a busy weekend of planning and shopping for the event. We were really glad that it went well and everyone enjoyed it.

Our group went through almost all of the vegetables and 120 pounds of crawfish. Chuck and I claimed the leftovers, which we peeled and cooked in a wonderful crawfish casserole. I want to share the recipe here on the blog for anyone who might be interested. I got this recipe from my best friend's mom. She and I enjoyed this casserole many times when we were growing up! I was fortunate to have so many wonderful meals from her kitchen and my own mother's kitchen when I was younger.

Crawfish Casserole

1 stick margarine
1 med/small onion, chopped
1 bell pepper, chopped
1/2 tsp. garlic salt
1 small can Ro-tel, drained
1 can cream of mushroom
2 c. cooked rice
1/4 c. chopped parsley
2 lbs. crawfish tails
1 can whole kernel corn, drained
bread crumbs
additional seasoning to taste

Preheat oven to 350 degrees.
First, begin cooking rice. In a separate pot, saute onion and bell pepper in margarine. Add crawfish and Ro-tel tomatoes. Stir and cook 5 minutes. Add corn and cream of mushroom. Stir and cook additional 5 minutes. Stir in cooked rice and parsley. Add seasonings (I use garlic salt, a little black pepper, and of course, Tony Chachere's). Put mixture in a greased casserole dish and top with bread crumbs. Bake 30 minutes or until center begins to bubble.

NOTE: I've been told that shrimp works just as well if you don't care for crawfish or have trouble finding it in your area.

What a great menu you had at the crawfish boil! I started getting hungry just reading about it. Thank you for the recipe. I am glad you mentioned that shrimp could be substituted for crawfish because I don't know if we have crawfish or not.

Sounds so yummy! I've never had crawfish before. I'm a lame midwesterner. But I will try this with shrimp :)

we haven't had a crawfish boil yet...we're planning one soon- I can't wait! I'll have to remember to try your recipe out with the leftover tails. We usually make crawfish linguini.Looks like yall had great weather too :)

That sounds delicious! I don't know that I could find crawfish up here... and although hubby likes shrimp I'm not such a big fan - do you think crab meat would work? I think lobster might be too expensive. :o)

I've never had crawfish before, but I'll definitely have to try it out sometime. I don't think we can buy it here. Maybe at a specialty shop or something, but I've never seen it at the grocery stores or known anyone who has made it here. I'll have to check it out some more and see! We have little crawfish in the creeks here, but not big enough to eat. Otherwise I'd go catch some and try out your recipe. ;-)

I am so jealous! We have yet to have our first crawfish boil. I keep trying to convince my husband for one on Easter Sunday! It sounds like you both had the best day! You both are so blessed to have wonderful friends.
I can see where you would miss LA. I used to think I could live anywhere else, now I am not so sure. Sending big prayers your way!

Yum ... in theory! I'm not a big fan of crawfish. I do think a crawfish boil makes a great spectator sport, though. ")

Looks delicious except for the crawfish part haha! I still love Louisiana though and would eat 20 crawfish if I could move there dang it. I'm glad you got a little taste of home!

Matt just reminded me that we did eat crawfish a couple of months ago! A friend of ours from La brought some and made crawfish linguine. I liked it (I even kept some leftovers to eat later), but Matt didn't because he thought it was too fishy.

Oh I don't think I could eat that- I'm not a seafood girl. But I have been to LA during Mardi Gras for a missions trip and we always have a crawfish night. Everyone (but me, LOL) goes nuts over those little guys!

I've probably eaten my weight in crawfish a few times, but I've never actually cooked it. One of the perks of being in the oil bidness, I suppose.

Thanks for all the comments, everybody! Trust me, I'm not very adventurous when it comes to food. If I hadn't grown up eating crawfish, there's probably no way I would try it as an adult!

Katie - we did have great weather that day. It was cooler than normal, which was nice, but it was incredibly windy! That was a bit of a challenge.

Nity - Hmm, crab meat. I don't know. But you're right, lobster would be pretty expensive!

My mom's side of the family used to have a crawfish boil every year on Easter weekend, so we always crave it this time of year. Hope you can have some soon!

Andrea - I haven't had the linguine, but I have a great recipe for crawfish fettucine. Sometimes Chuck and I cook it for Valentine's Day. :)

Teresa - What?! I'm so disappointed! I guess you can still be a Cajun at heart.
